In this education component we are going to estudy the factors what affect the content and evolution of the bioactive compounds. We are going to start doing a review about how genetic manipulation of vegetables can benefit high level of bioactives compounds. In addition, we will estudy the effect betwen enviromentaly production and conventional production, in order to find out differences about bioactive compounds. Similarly, we are going deep into the knowledge of the post-harvest treatment, which could improve the bioactives compounds or keep them longer.
Finally, we are going to review the bioactive compounds of animal origin.
